      I have spent several years and more money than I care to think about over the years on various hunting and fishing trips.  I have been on some great trips, and some that I should have stayed home.  Some of the best values and best trips have been with outfitters/charters that were recommended by friends.  I will give you my opinions to maybe save everyone some time and money if you are interested.  Remember these are MY opinions.  I will give my reviews by species.

ELK-I have bow hunted public lands in New Mexico and Colorado.  I highly recommend N.M. over Colorado.  I can speak for units 15,17, and 36. Unit 17 was my favorite.  Draw odds are about 1 in 7, or you can sometimes find unit wide landowner tags.

WHITETAIL-Kansas offers great hunting with archers getting the pick of the rut.  Try to find private land to hunt.  I feel the best opportunity for a giant (170+) deer is Canada.  The fall of 2006 I hunted with Great White Holdings-www.greatwhiteholdings.com in Alberta.  I was fortunate enough to kill the buck of a lifetime (210'' pictured above). 

MULEYS- No doubt, one of my favorite hunts ever was a spot and stalk bowhunt with Lost Creek Outfitters in Alberta, Canada.  I went with two other great friends and we brought home one Whitetail and three Muleys, all Pope & Young (174'',179'',196'').

SALTWATER-Whether you want inshore or offshore fishing, Reel Peace charters out of Venice, Louisiana, is one of the best in the business.  Chase big Redfish or Tuna.  Ask Capt Peace when the best times are.

I have been on other trips that were mediocre but these are the highlights. 
There is one outfitter in Colorado that is a total rip-off artist.  Rick Sears/Apache Park will feed you all kinds of lies and laugh all the way to the bank.

I hope this info is helpful, and remember to check references or go to www.huntinfo.com and check outfitter reviews before your next hunt.  I have not found an equivalant for fishing charters/guides.
